Located in Oromia’s southern Guji Highlands, Mormora Estate covers 250 hectares and is surrounded by canopies of natural rainforest. In addition to this land, Mormora estate is supplemented by over 400 nearby smallholder farms that add an additional 500 hectares of production capability and contribute to yearly production exceeding 280 tons of coffee. Mormora Estate practices organic and sustainable farming, with decades of decomposing plant matter, providing the coffee trees with a fertile growing environment.
This high-altitude coffee is picked and delivered to the Allona washing station where it is pulped, washed and spread out on raised African drying beds within 6 to 8 hours of picking. Drying takes between 10 to 15 days, during which the coffee is regularly raked and turned to ensure even drying. The coffee is covered during the harsh midday sun, and also overnight to protect it from dew. The final process is the methodical hand-sorting that is conducted by the estate’s women, ensuring that the final product meets the stringent specifications and quality level of an Ethiopian Grade 1 coffee.
